Axum Restaurant

Axum Restaurant is an omni Ethiopian restaurant in Denver with a good vegan selection. Vegan mains include the misir alicha (whole green lentils simmered until very tender and thick with onion, garlic, ginger and turmeric) and the shiro (powdered, herbed and spiced chickpeas simmered in a rich homemade onion and tomato bullion seasoned with pinch of garlic). All are served on injera (flatbread made from teff flour) and come with a house salad. Vegan dishes are not clearly labeled on the menu, so be sure to check with your server when placing your order.
