Carmo is the only place I know of in the city where you'll find this kind of island and Central / South American cuisine that keeps vegans in mind. It's not a veg restaurant, but several dishes can have vegan ham substituted for the real thing, and a number of others are vegan as is. There is always a special dish with a vegan version offered. The staff are friendly and knowledgeable, and the food is consistently delicious.
