Backwater is a breakfast and lunch spot specializing in pancakes. They even have pancake griddle tables if you want to do it yourself. They source only local/Florida ingredients, and support local non-profit organizations including To Write Love on Her Arms, a youth addiction and outreach organization, and the Marine Resources Council who work as stewards for the Indian River Lagoon.
Several of their dishes can be made vegan and gluten-free, and this is clearly marked on their menu. Vegan options might include a southern breakfast, pancakes, citrus waffles or a BLT sandwich. They offer tofu, vegan bacon, vegan sausage and gluten-free bread.
