Root Down is an omni restaurant in Denver that aims to connect the neighborhood to a dining experience in the same way that ingredients are connected to food. Dishes that can be made vegan are the tofu panzanella (heirloom tomato, cucumber, tomatillo, fennel, red bell pepper, black lentils, super seeds, basil, kale pesto) and the smoked corn chowder (purple potato, poblano chile, corn cracker, ancho coconut crema, micro cilantro). More than 50% of the ingredients used are locally sourced, seasonal and organic where possible.
