Nepal Cuisine is an omni family-owned Nepalese restaurant in Boulder with vegan options. Every Monday there is a vegan buffet lunch from 11am-3pm, with soy chia and all vegan appetizers, entrees and salad bar. In addition, entrées in the vegetarian section of the menu, such as chana masala (chickpea curry), baigan bhartha (roasted aubergine curry) and alu gobi (potato and cauliflower curry) are vegan.
