Nyala Ethiopian Cuisine is an omni Ethiopian restaurant in Fort Collins, open since 2004. Vegan dishes include the Engudai Tibs (lightly sautéed button mushrooms with diced onion, zucchini and shredded carrots), Duba Wot (fresh butternut squash stewed in a red pepper sauce and seasoned with an assortment of Ethiopian spices) and Atkilt Wot (a medley of chopped cabbage, potato and carrots sautéed to perfection). Note that vegan items are not labeled on the menu, so be sure to request vegan when placing your order. Organic, locally-grown ingredients are used whenever possible.
