Bombay Clay Oven is an omni Indian restaurant in Denver. Many of the vegetarian entrées are vegan, including the channa masala (chick peas slow cooked with fresh garlic, Kashmiri red chili and tomatoes), okra masala (okra and potatoes stir-fried with cumin seeds, dried mango powder, tomatoes and lemon juice) and eggplant bharta (fire-roasted eggplant, cooked with cumin, coriander and tomatoes). Eat-in, take-away, online-order and catering services are available.
