River Valley Farmer's Table is an omni farm-to-table restaurant in Chicago. Vegan dishes include the mushroom tacos (five kinds of mushrooms, fermented black beans, cabbage slaw and heirloom salsa), two types of vegan tamale and the bi bim bop (yellow curry quinoa and Israeli couscous with roasted seasonal veggies, toasted pepitas, shiitake bacon). Organic food produced on the restaurant’s mushroom farm in Wisconsin is used where possible.
