Vegetarian Express is a vegetarian health-food café with two stores in Chicago. Vegan dishes include the vegan scrambler (tofu, green peppers, broccoli, onions, mushrooms, potatoes and vegan mozzarella), ceviche (vegan fish, avocado, tomato, onions, cilantro, jalapenos, salt, lemon, tortilla chips) and the falafel wrap. There are also a wide range of juices and smoothies available.
