Beau Thai Restaurant is an omni Thai restaurant in Evergreen with good vegan options. Most dishes can be made vegan by replacing meat/fish with tofu. Highlights include the Thai Masamam curry (tofu with coconut milk, roasted peanuts, potatoes and carrots), garlic tofu (tofu and vegetables stir-fried with garlic, broccoli, snow peas and carrots) and the papaya salad (sliced green papaya, tomatoes, lime, green beans, peanuts and carrots in a spicy Thai dressing).
