They toast and rehydrate dried peppers to make their sauces; slowly simmering to create a thick savory sauce, without any thickening ingredients like flour. They don't use lard or bacon fat in their beans and their homemade salad dressings are vegan and gluten free. There are plenty of vegan options to choose from, including the Vegan Combo Special, the Capricho Salad, or the Roasted Butternut Squash Enchiladas.
