They do a mixed bean casserole with quinoa or cous cous, as well as falafels & pittas, chickpea salad, sweet potato fries, etc. Reviewer says: "The Olive Tree offers a range of vegan options. I chose from the dinner menu - a Mixed Bean & Vegetable Casserole with brown rice and a sneaky side of sweet potato fries to share. Very reasonably priced - couldn't recommend this restaurant enough if you are vegan and in Castlebar."
