The vegan dishes include a tossed salad with grilled eggplant and create your own pasta dishes. You could choose from whole wheat fusilli, tomato-basil linguini, zucchini noodles or organic quinoa pasta. Then add a garlic olive oil or choose from several tomato-based sauces, and top with vegetables of your choice (including roasted peppers, broccoli, artichokes and black olives).
