Vital Root is a vegetarian restaurant in Denver that offers healthy and satisfying fast food. 99% of dishes can be made vegan or gluten-free upon request, including the ‘everything bagel’ avocado toast (sunflower seed bread, crispy chickpeas, smoked almonds, date molasses) and the Bánh mì tacos (edamame “pâté,” lemongrass tofu, pickled vegetables, cucumber, fresh herbs, jalapeño, sriracha aioli). The restaurant uses organic oils (avocado, coconut, grapeseed, sunflower), unrefined sugars (coconut, maple, dates) and organic flours (ancient grain, coconut, quinoa). 100% renewable electricity and local and homegrown produce are used.
