Using only the freshest ingredients the Himalayan Nepali Cuisine brings Nepal and India to North Carolina. There are loads of tasty and spicy vegetarian options on the menu, most of which are vegan but not marked as such - just check with your server that it's not cooked in ghee (clarified butter) and doesn't include paneer (cheese).
You can choose from chickpeas cooked in onions; seasonal vegetables simmered with ginger, garlic and cumin; potatoes and cauliflower with onion, ginger and garlic; and lots more besides.
