At China Poblano at The Cosmopolitan, chef José Andrés’ was fascinated by the history he found connecting China and Mexico, two countries whose cuisine he has always admired. He wanted to bring these vibrant flavors and culinary techniques together in one place- where you can enjoy noodles, dumplings and tacos in one meal. Many of the vegetarian options are, or can be prepared, vegan - just ask your server. Vegan options include the Twenty Vegetable Fried Rice and the Happy Buddha Vegetable Spring Roll.
