Poor Richard’s is an omni family-run restaurant in Colorado Springs that has been open for over 40 years. Within the building as well as a restaurant there is also a café, wine bar, bookshop and toy store. In the restaurant the separate vegan menu has New York style pizza with Daiya vegan cheese, two burgers, a hummus plate, soup, salads and sides. Organic, fair-trade and local produce is used where possible and the restaurant has an environmental ethos.
