Pyramid Bistro is an omni health-food restaurant in Aspen. Dishes are prepared to give the maximum nutritional benefit per calorie, with over half the menu being suitable for vegans. Highlights include the Farro Risotto (with walnut butter, Swiss chard, pom hibiscus reduction, butternut squash), Lemongrass Tofu (forbidden rice, broccoli, rainbow peppers, Napa cabbage, cilantro, mushrooms, lemongrass tamari) and the Roasted Beet Salad (wild baby arugula, shaved apple, spiced almond, horseradish dressing, pom syrup). The restaurant is the world’s first nutritarian restaurant following the principles of Dr Fuhrman’s Eat to Live book.
