Illegal Jack's is a Tex Mex grill which has burritos, vegan haggis and vegan chilli. Vegan cheese is available for such things as your nachos and quesadillas. They have some deals on food during the week: call ahead to ask about these. They are conveniently located near the University of Edinburgh and they are a well-known "cheap eat".
