Root Down is an omni environmentally-conscious restaurant located in Denver International Airport, serving American cuisine with a global spin. Dishes that can be made vegan include the roasted beets salad (arugula, toasted hazelnuts, beet-sunflower seed pesto, basil vinaigrette) and the root down veggie burger (Pretzel Bun, Avocado, arugula, jalapeño jam, curry lime sauce, sweet potato waffle fries).     I’m vegan, WFPB. This was the best veggie burger I’ve had in a long time, although there was probably some oil involved. I loved the jalapeño chutney. They gave me fruit instead of fries- very happy! A bit of a wait to be served, but the food came very fast.
