Root Down is an omni environmentally-conscious restaurant located in Denver International Airport, serving American cuisine with a global spin. Dishes that can be made vegan include the roasted beets salad (arugula, toasted hazelnuts, beet-sunflower seed pesto, basil vinaigrette) and the root down veggie burger (Pretzel Bun, Avocado, arugula, jalapeño jam, curry lime sauce, sweet potato waffle fries). More than 50% of the ingredients used are locally sourced, seasonal and organic where possible.
